It never fails that about the time that we get a few warms days and the dogwoods are in full bloom in the woods behind our house that the conversation of a bluegill fish fry comes up with my family. We don't keep many fish but never feel bad about holding back a few bluegills from the pond for a couple dinners each spring. That said however, my family is picky how they eat bluegill. They want them filleted with the skin off which can be kind of tricky without the right tools. Where some whole fry their bluegill, ours carefully cut off the bone and turned into small narrow fillets. Not much better eating than a few fillets with a dusting of flour after hot oil bath to crisp.
I've found the perfect knife in the Woody Handmade Knives Drury Fillet Knife which makes quick work out of a small cooler full of bluegills with precise cuts and the right size for working with small to medium sized fish.
The Drury was designed as the perfect bird or trout knife and measures eight inches in length. It is made of 1095 HCS steel with a Curly Maple handle. The leather sheath holds the knife securely and the quality of all this handy fillet knife far surpasses the price. If you're looking for a special fillet knife that has as sharp of an edge as how it looks, this is it. The Drury is a essential piece of kit for the gear bag, especially in the spring when we're focues on bluegills coming to the fly...or cricket.
